Make these breakfast burritos ahead of time and eat them cold, or reheat them in the microwave if you prefer. Eggs are a great source of protein while avocado also provides some healthy fats.

Ingredients

Serves: 6

■ 6 large eggs
■ 1 tbsp extra-virgin olive oil
■ ¼ medium red onion, finely diced
■ 4 wheat tortillas
■ 4 tbsp salsa
■ 2 avocados, peeled, stoned and sliced
■ Fresh coriander to garnish (optional)

METHOD

1. In a medium bowl, whisk together the eggs. Set aside.

2. In a frying pan over a medium-low heat, heat the oil and sauté the red onion for 1-2 minutes, or until softening.

3. Pour the eggs into the frying pan and scramble for 4-5 minutes, or until the eggs are cooked through.

4. Evenly divide the egg mixture between the 4 tortillas, and top each serving with a tablespoon of salsa and sliced avocado (about ½ avocado each).

5. Garnish with a few coriander leaves, if desired, and roll the tortillas around the filling. Serve on the same day.
