protein pancake

“This breakfast cake is the perfect post work out refuel, great if you’re on the go and can be prepared ahead for busy days. Banana provides the slow release carbohydrates to give you energy, the eggs, almond butter & yoghurt provide you with the essential protein and healthy fats. With the added fruit packed full of vitamins it’s the perfect start to the day and tastes great. Mix it up with different fruits, nuts and Meridian butters to find your favourite combo.”

Ingredients (serves 4):

2 large bananas

3 eggs

Meridian smooth almond butter

1 tub Greek yogurt

Strawberries, chopped

Blueberries

A little oil – we used coconut

Honey or maple syrup to serve

Method:

  • Mash the bananas, add the eggs and then whisk into a pancake consistency
  • In a pan heat a little oil and cook 3 pancakes out of the mixture (add one more banana and an egg if you need more mixture depending on thickness)
  • Place one pancake on a plate and spread with Meridian Almond butter
  • Add the chopped strawberries
  • Place another pancake on top and spread with Greek yogurt
  • Sprinkle over a layer of blueberries
  • Place the final pancake on top and serve with a dollop of Greek yoghurt, almond butter and blueberries to finish and a drizzle of honey or maple syrup
